Yoichi Town in Hokkaido is a port town with a long history of seafood production, prospering from Cape Shiriba and herring, and famous for Nikka Whisky and wine. Karasumi, one of Japan's three great delicacies, is carefully prepared by the craftsmen of a fishery company in this port town using their reliable techniques.

In Japan, karasumi is famous in Kyushu and Nagasaki, but is rarely produced in northern Japan. The extremely rare Hokkaido karasumi, which accounts for less than 1% of all karasumi, is produced in Yoichi Town.
This is a masterpiece with a beautiful lingering aftertaste of aged aroma reminiscent of Hokkaido cheese and yogurt.
